Description

A 1:4 concentrate steeped 18 hours. One bottle makes about eight cups. Unsweetened, so it works with milk or without.

Eighteen hours in cold water pulls out the sugars and very little of the acid, which is why cold brew tastes rounder than iced filter coffee and sits more easily on an empty stomach.

At one part to four the bottle makes about eight cups, and it is unsweetened, so it works with milk, with water, or with neither. Once opened it keeps a fortnight in the fridge.

Amber glass rather than clear is a light barrier. Coffee oxidises under UV, and a concentrate sitting in a fridge door for a fortnight would show it. The bottle holds 500ml, so a full batch is about eight cups at one to four.

Cold brew is brewed once and served either way: diluting with hot water gives a perfectly good americano, and it is the thing most people never try. Fourteen days after opening is a real limit rather than a conservative one.

Care and safety

Refrigerate it from the moment it arrives and use within 14 days of opening. Dilute one part concentrate to three parts water or milk. The bottle is amber because light degrades coffee, so keep it inside the fridge rather than in the door where it is exposed each time.

Ingredients

Water and coffee. Nothing else: no sugar, no sweetener, no preservative and no dairy. The coffee is Colombian Huila, ground coarse and steeped cold for 18 hours, then filtered. Because there is no preservative it needs refrigeration and has a 14-day life once opened.
