A washed Ethiopian from the Yirgacheffe zone, roasted light enough to keep the citrus. Roasted to order and stamped with the roast date, not a best-before.
A roast date rather than a best-before is the single most useful thing printed on a bag of coffee. Beans need a few days to release carbon dioxide and are at their best somewhere between four and twenty-one days from roast, which a best-before date tells you nothing about.
Washed processing strips the fruit off before drying, and that is what leaves the citrus and floral notes clear instead of jammy. Keep the bag sealed at room temperature: a fridge introduces condensation, which does more harm than a week on the shelf.
Three hundred and forty grams is about twenty cups at a standard filter dose, which for coffee roasted to order means the bag is finished inside the window it is good in rather than going stale at the back of a cupboard.
