Description

Raw, unfiltered wildflower honey from a single apiary. It will crystallise — that is what raw honey does, and warming the jar reverses it.

Crystallising is what raw honey does as the glucose comes out of solution, and a honey that stays clear on a shelf for a year has usually been heated hard enough to stop it. Stand the jar in warm water and it goes back to liquid.

Unfiltered means the pollen is still in there, and that is where the character of one apiary comes from. One rule holds regardless of quality: no honey for a child under twelve months, because of the risk of infant botulism.

Wildflower means the bees were not confined to a single crop, so the flavour follows whatever was in bloom in the Willamette Valley that season and varies from year to year. A single-crop honey is more consistent and less interesting.

Never heated above hive temperature is the specific claim that separates raw honey from most supermarket jars, and it is what leaves the enzymes and the pollen intact. Glass with a metal lid is chosen on the same logic: nothing to leach into a product that keeps indefinitely.
